* Not all soy sauces are gluten free – check your bottle if you know you are feeding celiacs etc
Kale – 6-7 large bunches, chopped into small pieces. (curly or straight)
6 cups nuts (any will do)
3 cups sesame seeds
50 pitted kalamata olives – roughly chopped if you can be bothered.
Soy sauce, lemon juice, paprika, cayenne pepper etc – adapt to suit what you’re serving it with
Heat oven to 180°C
- Place the kale, nuts, sesame seeds and olives in a deepish baking tray and toss together.
- Add some soy sauce, lemon juice, paprika, cayenne pepper etc to taste – start with about a tablespoon of soy sauce and lemon juice, a tablespoon of paprika and a teaspoon (or less) of cayenne. Give it all a good stir and adjust seasonings to taste as required – it is much easier to add more than rinse anything out!
- Bake for 30-50 mins until golden brown. Stir it a couple of times whilst cooking.
If cooking small quantities of it at home it can also be done in a cast iron pan with a lid instead of the oven.
This dish is really flavoursome and looks quite different so can be used to make a basic meal appear more sophisticated with very little effort!
